When we started working full-time, we were struggling with the question what to eat for lunch at the office. Slowly but surely we are getting into it and therefore we are introducing the new series “Office Lunch with kessyandjoey” to you. In the next couple of weeks, you will find easy recipes mostly for dishes which are easy to prepare beforehand and simple to take with you to work.
The first recipe is a broccoli and mushroom quiche. We love quiche not only because it tastes fantastic but also because it’s perfect for using up left over vegetables and cheese. Simply prepare it for dinner and then eat it cold or warm it up again at work.
What you need
- Quiche dough
- 4 eggs
- 250 ml cream
- 300 g cheese
- Half a broccoli
- 100 g mushrooms
- 1 onion
How to prepare quiche
- Cut the onion, fry it
Cut and boil broccoli, cut mushrooms in fourths
- Mix eggs with cream and 200g grated cheese
Add salt, muscat and basil
- Add onion, broccoli and mushrooms and mix well
- Grease quiche form and lay out the dough
Use a fork to make small holes and spread the egg vegetables mixture
- Spread the rest of the cheese on top
- Put the quiche in the oven for 40-55min and 180°C
Tip: Use the grill function for the last 5 minutes to get it brown on top.
The best thing about quiches is that you can vary so much with the ingredients. For example, you could add ham and garlic to this quiche. Other very delicious variations are a leek quiche or a classic quiche Lorraine.
